As a kid growing up, I packed a lunch because my mom felt she could make healthier meals, and I’m sure there was a cost concern involved. My favorite thing to find packed in my lunch was when mom used her holiday-colored bread. The strangest thing I saw on the school menu was pizza with white bread slices. I didn’t try it, but I remember it didn’t look great. Today, I think most parents don’t believe they have the time to pack lunches, so they give their kids money instead.
If I could create one school lunch item from scratch, it would be roast turkey with cornbread dressing. The ultimate school lunch menu would include light proteins, plenty of fresh vegetables, and healthy grains.
Packing school lunches and meal prepping as an adult are similar. You must create items that hold up well, have great flavor, and visual interest. It’s also important to ensure a well-balanced and nutritional meal.
